Inspired by the neighbourhood that gave rise to generations of market traders, makers, musicians and cultural legends, Bow Bar has swaggered its way onto Edgware Road and set up shop in the Hilton London Metropole.
It’s a place that pays homage to a part of London that has always done things differently. A neighbourhood where Cockney heritage sits alongside creative ambition. Where flower markets, warehouse parties, family-run businesses and some of London’s best bakeries all mix, mash, and meld within the same streets.
Just as Bow itself treads the line between the polished financial district and East London’s creative dynamism, Bow Bar balances street attitude with city refinement. Located on the ground floor of the largest Hilton hotel outside the US, the striking contemporary space centres on a dramatic bar, copper detailing, and warm lighting, brought to life by commissioned artwork from local resident Olha Pryymak, whose pieces draw inspiration from some of East London’s most iconic neighbourhoods.

E3 inspired
Bow Bar’s new cocktail menu embraces the energising cultural mash-up that keeps E3 and its neighbouring districts authentic and interesting, with a collection of serves that map out an immersive, flavour-led route through the East End’s past and present.
Berries in Bloom cultivates a bright, floral serve inspired by the seasonal colour of Columbia Road Flower Market while The Coffee Exchange tips its hat to the historic coffee houses that once fuelled East London’s commerce and conversation, reimagining the Negroni through rich coffee notes and bittersweet aperitivo character.
As evening falls, Brick Lane After Dark captures the energy of one of London’s most recognisable streets once the market stalls have packed away and the restaurants, bars and fuzzy neon glow take over. Hugo’s House Set draws inspiration from house music culture, transforming the familiar Hugo Spritz into a fresh, vibrant serve designed around atmosphere, rhythm and easy-going vibes.
Elsewhere, East India Club references the tea trade that once flowed through East London, layering Earl Grey flavours into a refined and aromatic cocktail, while Rosemary Lane takes its name from one of the area’s more historically eccentric streets, pairing botanical notes with understated elegance. Vault, ECV2 looks to the City’s financial district and the institutions that shaped it, while Dalston Darling celebrates the playful creativity and independent spirit of the Hackney gem.
The route ends with East End Ember, a smoky, warming serve inspired by the area’s industrial heritage, balancing the depth of spiced pineapple with a lingering finish that reflects the grit and energy of modern East London.
Beyond the cocktails, Bow Bar offers a carefully curated selection of London craft beers, palate-pleasing wines, and premium spirits, including Bow Bar’s very own 225 Gin, blended and bottled in the capital, and available to take home.
Use, infuse, transform, re-use
East London’s no-nonsense attitude filters through to Bow Bar’s attitude to sustainability; less talk, more action.
Powered by 100% renewable electricity and operating with zero waste to landfill, the bar has eliminated single-use plastics in favour of biodegradable agave alternatives, pours Toast Ale on draught – brewed using surplus bread to help tackle food waste – and outfits its team in uniforms made from recycled plastic bottles.
Behind the bar, ingredients are given a second life wherever possible. Citrus peels become infusions, fruit offcuts are transformed into garnishes and herbs are grown in a hydroponic garden that sits on the bar itself.
The approach has earned national recognition, with Bow Bar receiving Bar Magazine UK’s Environment Award, making it one of the few hotel bars in the country to be recognised at national level for environmental performance.
Tasty morsels and more
Like the neighbourhood that inspired it, Bow Bar’s food offering is relaxed, sociable and unpretentious.
Designed for light lunches, informal meetings and all-day grazing, the menu brings together British ingredients and global influences in a collection of dishes made for sharing, stealing, and ordering just one more.
Small plates include: Crispy Squid with charred lime and chipotle mayo; Salmon Ceviche with blood orange and coriander; Bay-spiced Fried Buttermilk Chicken with garlic mustard mayo; and Baked Feta served with thyme honey and beetroot wafers.
For something more substantial, classic Caesar and Cobb salads sit alongside comforting mains including a Yorkshire Wagyu burger, Crispy Battered Haddock, and Sweetheart Cabbage with romesco almond sauce and pumpkin seed granola.
Whether you’re dropping in for a quick lunch, settling in for pints after work, or making a recurring date with Girls Nights’ 2-4-1 cocktails every Saturday from 5.30pm-7.30pm; Bow Bar serves it up with plenty of character.

The cocktails were especially good. There were plenty of options for Gin lovers. The Wagyu Burger was fantastic and so nicely followed up by an excellent Creme Broulee – we highly recommend.
