THE DAWNING OF A NEW SEASON FOR COGNAC AT L’INDIGO BAR BY MARTELL

The House’s iconic rooftop bar reopens on June 4th, launching the summer season with Martell Global Master Mixologist Rémy Savage in residence. Each summer, from June to September, L’Indigo Bar by Martell offers curated programming and bold new cocktails with a panoramic view of Cognac. For the 2025 season, Martell Global Master Mixologist Rémy Savage and his team serve up Martell cocktails with a fresh new take on beloved classics.
Make it with Martell
Since 2020, Remy Savage has been working with Martell cognacs as the House’s global master mixologist.
This year, Remy and his partner Sara Moudoulaud are taking things to the next level by establishing their residence in Cognac for the season. To mark the occasion, they have crafted a collection of creative cocktails that rethink the classics through the lens of cognac. By turning to cognac as the base for beloved recipes, Rémy Savage showcases the smoothness and complexity of the House’s iconic blends, adding on a fresh new twist that smashes expectations.
On the menu, some imaginatively revisited recipes and signature serves created by Martell Master Mixologist Rémy Savage: the refreshing Martell Fine à l’Eau, a mix of Martell VS, verjus and sparkling water is an effervescent surprise.
Amongst revisited cocktails, it will be possible to order a Margarita with Martell Blue Swift, orange liqueur and lime, makes for a zesty thirst-quencher. Also with a Martell Blue Swift base, a Mojito combining lime, soda water and mint. Finally, the Martell Negroni features Martell VSOP with the classic additions of sweet vermouth and a choice of gentian-based bitters. Whatever the drink, Martell cognac is at the heart of the story this summer at L’Indigo.
The Man behind the Glass
Known among drinks connoisseurs around the world, Rémy Savage is an award-winning bartender and Martell Global Master Mixologist since 2020. Maison Martell has always worked with the finest experts and Rémy Savage is no exception. Admired for his creative flair, Rémy Savage has shaken up the world of mixology by challenging conventions and pushing boundaries to explore new taste experiences. His cocktail journey has taken him all over, from Paris to London and back again, opening innovative new bars in both cities. Over the course of his tenure at Maison Martell, Rémy Savage has learned to rely on the House’s nuanced, aromatic cognacs as bases for classic cocktails, adding layers of complexity and surprise to the glass.

“Since the beginning of my collaboration with Martell, my love and curiosity for this city, its vineyards, and its craftsmanship have only grown. As summer approaches, I felt the desire to settle here for the season, to share our world with the people of Cognac, under the indigo sun. This season will be a unique opportunity to continue exploring and discovering this terroir.
A delicious ‘trick’ I learnt with time when making a drink for myself (or people I love) is simply to turn to cognac as a base for their favourite classic. The rich and aromatic nature of Martell is comfortable blending in most cocktail structures and often adds a layer of complexity that surprises many !” Rémy Savage.
