For instance, citrus fruit is a key ingredient in Thai cuisine, particularly Kaffir limes. Not only do limes enhance the delicious flavour of the dishes, but they also have a secondary use elsewhere in the hotel – the high levels of citric acid makes them the perfect base for cleaning products. The Tongsai Bay uses discarded citrus peels to make biodegradable cleaner, not only does this mean the hotel saves money from purchasing mass-produced cleaning products, but it also minimises the use of chemicals that may potentially leech into the soil and harm the environment.
