Mermaid is a hand-crafted, small batch gin distilled on the Isle of Wight, using ten ethically sourced botanicals. A smooth yet complex blend of fresh organic lemon zest, infused with peppery notes from Grains of Paradise and a hint of sea air from fragrant rock samphire, locally foraged between the sea and the shore.
In contrast to the free-spirited Mermaid, the distiller is obsessive in his control of process, time and temperature. The team cut the gin at the perfect moment, capturing just the hearts and the sweet spot of any distillation. The slow distilled gin is rested for seven days to let the botanical flavours and aromas mellow and marry together, creating a signature, smooth, fresh flavour.

Making history with Mermaid Gin

The first and only distillery on the Isle of Wight was licensed in 2014 by friends Xavier Baker and Conrad Gauntlett. By combining a wealth of experience in brewing and wine-making with locally sourced ingredients, they have created a range of premium spirits that express the beauty and character of the island they love.
The Isle of Wight Distillery, home of Mermaid Gin, is committed to environmentally friendly production, the preservation of the island and the marine environment. By selecting biodegradable and recyclable materials, the distillery helps to preserve the mermaids’ world.

Serving suggestions: Mermaid and Tonic

Glass: Copa or Hi Ball.

Garnish: Juniper berries, a sprig of samphire or a ribbon of cucumber.

Ingredients: 60ml of Mermaid Gin, splash of Fever-Tree Indian or cucumber tonic.

Method: For the perfect serve, fill a glass with ice, a generous measure of Mermaid Gin and a splash of Fever-Tree tonic. Simply garnish with juniper berries, a sprig of samphire or a ribbon of cucumber and let the flavours shine through.
